A type of flatfish, the Halibut on average weighs from 24 to 30 and is found in the North Pacific and North Atlantic. The Halibut lives in deep waters where it uses its darker skin to hide along the ocean floor and sneak up on its hapless prey. 

Halibut can be pan-fried, poached, or be placed in a soup or stew. This fish is very delicate to the taste and soft when cooked. Adding something sweet like a honey mustard, ginger broth, or white wine is recommended.
